Baruti's ‘Chai’ was inspired by the delicious drink ‘Masala chai’. Chai, which is popular throughout South Asia, consists of black tea, milk, sugar and various spices. Almost every family there probably has its own secret recipe, so there are countless variations and ways of preparing chai tea. Spices such as cardamom, cinnamon, ginger, peppercorns, Indian bay leaves, cloves and nutmeg are usually boiled in water, then tea, milk and sugar are added and the mixture is boiled again.
Baruti's recipe also includes a whole range of the spices mentioned above. Cinnamon and cloves are immediately identifiable, but ginger, cardamom with its almost minty flavour and pepper also make their familiar appearance. Black tea, milk and bitter cocoa, as well as subtle notes of rose, vanilla, musk and leather, have been blended into this wonderfully spicy mixture.
